Attempting to Veg

I don’t know about you, but I feel the need for a little cleanse after all the Jazz Fest madness. A lot of cocktails and cheeseburgers. I would like to get reacquainted with vegetables. So, lets head over to the last gasp of today’s Crescent City Farmer’s Market. The Green Plate Special is from Cafe Adelaide and consists of Turtle Soup au Sherry, File Smoked Pulled Pork Poboys with Pickled Mirliton Chow Chow and Balsamic Aioli, White Chocolate Biscuit Pudding with Barq’s Syrup. Man! That is some rich food. Not exactly the lighter fare I had in mind. Well, we’ll have that for lunch and then we’ll go vegetarian for dinner.

How about this Greek Quinoa Salad? They have quinoa in bulk for really cheap over at Whole Foods.

Here are the ingredients:

3-4 cups water or vegetable broth

1 1/2 cups quinoa, uncooked

1/4 cup apple cider vinegar (you may use any flavor you prefer)

2 cloves garlic, minced

juice from one lemon

3 tbsp olive oil

1/2 cup kalamata olives, sliced if desired

1/3 cup fresh parsley, chopped

1/3 cup fresh cilantro, chopped

1 red onion, diced

1 cup cherry tomatoes, sliced in half

1/2 cup chopped artichoke hearts (optional)

salt and pepper to taste

1/2 cup crumbled feta cheese
